Thanks to its multi-cultured history, Moroccan cuisine is unusually diverse, especially when it comes to the use of spices and the blending of sweet and savory flavors. Coming together to take part of a meal is a true event in Morocco, and requires a certain amount of time and willingness to enjoy. In a fine restaurant, a meal like the one pictured above usually contains several courses, with various dishes of olives, fruits, pastries, and salads being served before the main course ever makes its entrance. And of course, there is always freshly baked bread served alongside. Traditionally, fresh fruit and mint tea are served afterwards.
