A Recipe for Chicken Tagine with Preserved Apples

As autumn draws ever nearer, one of the comforts that helps us through the loss of summer is the thought of the fall comfort foods that will be in abundance, including apples. This delicious chicken tagine makes ingenious use of them, as well as their proverbial spice accompaniment, cinnamon.  If you don’t have apples available, feel free to use pears, instead.

We Recommend . . .

. . . checking the bottoms of the apples you plan to use. If the apples have pronounced dimples, they're made for eating, and won't cook well. Use apples that have rounded bottoms, such as Winesap or Cortland.
Ingredients
For chicken:
  • 1 whole chicken, 3 - 3.5 lbs
  • 1/4 cup oil
  • 2 onions, chopped
  • Salt to taste
  • 1/2 teaspoon ground pepper
  • A few strands of saffron
  • 1 teaspoon ginger
  • 1 teaspoon ground coriander
  • 2 1/4 cups water
  • 1 cinnamon stick
  • 1 tablespoon sugar
For apples:
  • 3 apples
  • 1/3 - 1/2 cup water
  • 1 teaspoon butter
  • 1/4 teaspoon cinnamon
  • 4 tablespoons sugar
  • Extra cinnamon for dusting
Procedure
In a large saucepan over medium-high heat, brown chicken in oil. Reduce heat, then add onions, salt, pepper, saffron, ginger, and coriander. Stir occasionally, until onions become translucent. Add water, cover, and let simmer for 15 minutes. Add cinnamon stick and sugar to the pot, then cover again and let simmer for another 20 minutes, until chicken is done. Meanwhile, peel and core apples, then slice them crosswise. Place sliced apples and water in a saucepan over medium heat, and cook for 5 minutes. Add butter, cinnamon, and sugar, then reduce heat to low. Continue to simmer, stirring occasionally, until chicken is done. Arrange whole chicken on center of a platter, spooning extra sauce over it. Arrange apple slices in a ring around the chicken, and dust them with a little extra cinnamon.
Preparation Time: 45 - 60 minutes
Servings: 4 - 6
